The kitchen starts with @conestoga_eggs, separating the yolk, and then, using a syringe, *very carefully*, drawing out about 30% of the volume. Through the same syringe, truffle purée is then injected in the space that has been created. The purée goes in hot to partially cook and warm the yolk (while keeping it runny). To finish, the yolk is topped with fresh grated black truffle.
